So I'm looking at a Dobyns rod for my smoke when I buy it and I have it narrowed down to to the 7 ft glass medium crankbait rod and the 6'8 or 7 ft medium crankbait rod. My question is what are the differences and advantages of a glass rod vs a normal rod?

Glass is typically heavier than graphite. Fiberglass rods also can flex more than 90 degrees without damaging the blank like graphite can be prone to. Fiberglass rods offer a more moderate action, not power meaning the rod will flex further into the blank than just the tip. I have used a 7' mh St. Croix premier casting rod for years for cranking. Recently I got a 8' fiberglass graphite blend crankin' rod for throwing big cranks and there is no looking back. The graphite rod will be better suited for jerkbaits and spinnerbaits where the glass rod will be more suited to keeping fish hooked on light line like most people use for cranking.
If you don't throw crankbaits in the 3/4 to 1 oz range ever, get the graphite rod.

I use the 7' graphite for shallow to mid depth cranks and jerkbaits. I'll bring it to the tourney and you can play around with it and see if you like it during prefishing before committing to a purchase.

the 704 is good for your smaller cranks like the bandits or normal little Ns, but if you're looking to throw something like squarebills or like SK series 4 or RC 2.5s, then the slightly stiffer 705 is gonna be a better choice. the 705 is also better for jerkbaits and top water.
